Throughout the three-day event, attendees enjoyed BWT’s iconic Magnesium Mineralized Water, while exhibitors brewed coffee, tea, and matcha using Bestmax Premium filtration—highlighting the critical role water quality plays in unlocking the full flavor potential of hot beverages.

To bring this message to life, BWT hosted over 15 tasting sessions, featuring side-by-side pour-over comparisons between local water and BWT’s Bestmax Premium filtered water. TORONTO, Canada – evian, the iconic natural spring water from the French Alps, celebrated Canada’s culinary excellence at the MICHELIN Guide Ceremony 2025 with Mineral Spring, an immersive installation by artist and creative director Emilie Baltz. Inspired by evian’s 15-year journey through Alpine rock and glacial sand, the dining table is transformed into a sculptural art piece: a crystalline landscape where exceptional quality, refinement, and gastronomy converge.

The installation also echoes the evian ritual, a practice that elevates dining by transforming the simple act of pouring water into a moment of care and refinement.

From the presentation of the glass bottle to the precision of the pour and the attention to temperature, every detail is designed to honour the first taste and awaken the palate. In this way, Mineral Spring brings evian’s role in fine dining to life, positioning water not only as an accompaniment, but as an essential part of the culinary experience.

Rooted in the French Alps, evian is naturally filtered for over fifteen years through glacial sands and stone, emerging with a distinctive unique balance of minerals and a naturally alkaline pH of ~7.2. Naturally enriched with calcium, magnesium, bicarbonates, and silica, it offers a crisp, refreshing taste that nourishes body and mind. These qualities make evian a natural complement to gastronomy, enhancing flavors and providing chefs and diners alike with a refined approach to hydration.

“At evian, we believe water is more than hydration; it is a cultural companion that elevates life’s most refined moments,” said Alexandra Latendresse, Head of Beverages at Danone Canada. “Our collaboration with Emilie Baltz and the MICHELIN Guide Ceremony 2025 reflects our commitment to celebrating excellence and inspiring experiences that connect nature, artistry, and gastronomy.”

Internationally acclaimed for her pioneering work in food and experience design, Emilie Baltz creates multisensory installations that spark joy, imagination, and connection. Mineral Spring continues her exploration of how art, design, and gastronomy transform shared spaces into cultural experiences.

Set as a formal dining table, the installation evokes both terroir and transcendence, inviting guests to gather around a crystalline terrain that narrates water’s Alpine passage through limestone, dolomite, clay, and moraine. More than an artwork, it becomes a collective experience that expresses evian’s origin story through sculptural form and sensory detail.

From tasting menus to wellness rituals, evian continues to redefine the role of water as both a palate cleanser and a cultural companion. Just as MICHELIN Stars honour the artistry of gastronomy, evian’s presence at the Ceremony reflects a shared commitment to excellence, refinement, and inspiration. This moment also builds on evian’s longstanding two-year global partnership with the MICHELIN Guide, uniting both brands in their dedication to elevating dining experiences and celebrating culinary excellence worldwide.

evian warmly congratulates all of the newly awarded chefs and restaurants recognized at the MICHELIN Guide Ceremony 2025, celebrating their remarkable contributions to Canada’s culinary landscape.

This installation will also be presented at the Vancouver MICHELIN Ceremony on October 2nd.

MONDSEE, Austria – At World of Coffee 2025, you can see for yourself how perfect water sets new standards for every coffee worldwide. At Booth 1843, BWT water+more invites you to an exclusive “Brew it yourself” station, exciting cupping sessions, refreshing cold brews and a big anniversary party – all in the name of the art of the best coffee water.

From 26 to 28 June, World of Coffee (WOC) in Geneva will be transformed into an Eldorado for coffee enthusiasts. At Booth 1843, and therefore right beside the SCA Community Lounge, BWT water+more will provide a brilliant highlight: a festival of senses revolving around the perfect water for complete coffee enjoyment.

As a long-standing host sponsor of WOC, BWT water+more will present an innovative interactive experience, in which all the visitors can simply discover the finest nuances of high-quality coffee for themselves.

Katharina Ante, barista trainer and Head of Coffee at BWT water+more, demonstrates how good coffee tastes with BWT-optimised water.

Irrespective of the preparation method, the huge difference made by BWT-optimised water will be impressively demonstrated. “Everything at our booth is perfectly tailored to the needs of baristas and roasters. We are pleased to be part of this inspiring community and to be able to make such events possible in collaboration with the SCA,” says Dr Frank Neuhausen, co-founder and Managing Director of BWT water+more.

Showcase of the premium coffees of our times

A particular highlight at the booth: a selection of rare coffee varieties that are currently among the best on the market. These coffees are real rarities. Even experienced professionals in the speciality coffee segment rarely get the pleasure of drinking them. But everyone in the community is aware of their reputation. BWT water+more is bringing these unique beans to Geneva – not only for tasting, but also to showcase how optimised water can be used to lift a fantastic basic product to a new taste level.

Small coffee gems in the spotlight

On the open BWT stage, baristas and roasters can prepare and present special coffees from all around the world. They will use BWT bestbarista ROC COFFEE – a high-performance reverse osmosis system with innovative remineralisation that lifts the water quality to an unprecedented level. It reduces undesired contents in the water to a minimum whilst simultaneously adding important minerals in a targeted manner.

Whether it’s the Barista Attitude Tempesta or the Eversys Cameo, all the appliances at the BWT booth are operated with BWT- optimised water.

This makes the coffee aromas appear clearer, the texture smoother and the body more complex. The special thing about this system is that it delivers standardised water of a consistently high quality anywhere in the world – whatever the quality of the local untreated water. Therefore, it creates constant brewing conditions on which roasters and baristas can rely.

At the new “Brew it yourself” station, visitors can see for themselves just how much influence the water quality has: here they can brew their favourite coffees themselves – once with normal tap water and once with BWT-optimised water.

The difference becomes apparent from the very first sip: BWT-optimised water feels softer in the mouth and has a more balanced acid structure and a richer taste. This experience is also confirmed by Katharina Ante, barista trainer and Head of Coffee at BWT water+more: “With the uniquely optimised water produced by our BWT bestbarista ROC COFFEE, we get the best out of every high-quality coffee. The difference is noticeable – and can be tasted.”

Cupping sessions and cold brew specials

BWT water+more will also offer flexible cupping sessions at which different water samples can be tasted. Visitors will taste how BWT bestbarista ROC COFFEE raises the taste of the water to a new level.

The cold brew station will provide refreshment for the visitors, using ice from a Scotsman machine and water treated by the BWT bestico filter cartridge to create refreshing iced coffee specialities – perfect for hot days at the trade show.

Practical service for baristas and roasters

At the filling station at the BWT water+more booth, baristas and roasters can draw BWT-optimised water to optimally supply their machines at WOC in Geneva – for perfect coffee enjoyment at every booth.

Booth party and 20 years of BWT water+more

On 26 June, it will be party time: BWT water+more is going to mark its 20th anniversary with a big party at the booth – a celebration for the coffee community that is not to be missed.

Machine highlights at the booth

• Barista Attitude Tempesta (2-group)
• Eversys Cameo
• Scotsman ice cube maker

All the machines will be operated exclusively with water from BWT bestbarista ROC COFFEE or BWT bestico – for top-quality coffee and ice.

ALEXANDRIA, VA, USA – America’s favorite packaged drink, bottled water, had the highest volume growth rate of all other beverages in 2024, the International Bottled Water Association (IBWA) reports, according to new data from the Beverage Marketing Corporation (BMC). . Nearly all other drinks had negative growth in 2024, reaffirming that bottled water’s robust performance is the result of consumers making the wise switch from less healthy packaged drinks to bottled water.

For the ninth consecutive year, bottled water is the number one beverage, by volume, in the United States. Bottled water’s total consumption volume in 2024 was 16.4 billion gallons, with a growth rate of 2.9%. Carbonated soft drinks (11.9 billion gallons) grew by a mere 0.2% and energy drinks by 1.6%, while sports drinks fell by -2.7%, ready to drink coffee by -2.3, fruit beverages by -2.5%, and both value-added water and ready to drink tea fell by -1.3%.

Bottled water retail sales reached $50.6 billion, up 3.7% from 2023

“Though sometimes regarded as competing with tap water, bottled water actually achieved its position as the biggest beverage category by enticing consumers away from other packaged beverages. Some consumers may have transitioned away from regular, full-calorie sodas in favor of their diet (or ‘zero-sugar’) iterations, but many others opted for bottled water instead. And as some consumers grew leery of artificial sweeteners, they moved away from diet sodas as well as regular versions,” says John G. Rodwan, Jr., BMC’s editorial director.

“Bottled water’s zero-calorie status and its lack of artificial ingredients appeal to many consumers. Even where tap water may be safe and readily available, people may prefer bottled water,” says Rodwan. “The availability of packaged water wherever beverages are sold also differentiates bottled water from tap.”

“Whether consuming refreshing, high-quality water from a 3- or 5-gallon jug and watercooler or picking up a convenient, resealable, grab-and-go PET container, bottled water offers a healthy and smart choice,” says Jill Culora, IBWA’s vice president of communications. “Consumers who choose bottled water know both options can lessen their personal environmental footprints when they choose water over other packaged drinks. Watercoolers provide thirst-quenching water from 3- and 5-gallon containers that are collected, cleaned, sanitized, and reused 35-plus times before being recycled. And the market’s most popular, individual-sized PET plastic bottle is not only the most recognized as being recyclable but also the most common item in curbside bins (53%), making it easy for consumers to make the right choice and recycle rather than trash empty bottles.

PET bottled water containers are also ultralight in weight, using nearly 1/3 less plastic than PET soda bottles, which require thicker plastic due to carbonation.

Increasingly, bottled water companies are using post-consumer recycled plastic to make new bottles, instead of using virgin plastic, which drastically reduces greenhouse gas emissions.

Bottled water’s volume surpassed soft drinks for the first time in 2016 and has done so every year since. Americans consumed, on average, 47.3 gallons of bottled water in 2024.

“Consumer preference for convenient, safe, and healthy bottled water is good news for public health,” says Culora. “This is particularly important as the nation continues to experience high rates of obesity, diabetes, and heart disease.”

“Helping people make healthier choices is at the core of the bottled water business,” says Culora. “Consumers have made it clear that there’s a demand for safe, healthy, and convenient bottled water, as they are responsible for propelling bottled water to the title of America’s most popular packaged beverage, by volume.”

Whether you are at home, in the office, or on the go, IBWA encourages all consumers to make healthy hydration a part of their lifestyle and select bottled water as their packaged beverage of choice. And, of course, always recycle your empty containers—with the caps on.

VENICE, Italy – Nijhuis Saur Industries (NSI) has been awarded the prestigious Golden Lion Award at the 19th Venice La Biennale for its bold and visionary project, Canal Café — a unique water treatment plant that turns the iconic waters of Venice into high-quality espresso, redefining water reuse and innovation.

The Golden Lion Award celebrates excellence in architecture, sustainability, and innovation. Canal Café stands out for its technical ingenuity and compelling message: water, even from unexpected sources, holds untapped potential when approached with creativity and care.

Menno M. Holterman, CEO of NSI, emphasized the significance of the recognition: “This award underscores Nijhuis Saur Industries’ role as a global leader in water technology and circular economy solutions. Through innovative, practical, and inspirational projects like Canal Café, the company continues to deliver on its #MissionWater, driving sustainable water use and resource recovery.”

The idea behind Canal Café was first introduced at Aquatech Amsterdam in March 2025, a collaboration between NSI and Diller Scofidio + Renfro (DS+R). The concept challenges perceptions of water reuse by transforming Venetian canal water—filtered and purified through advanced technology—into fresh espresso.

What started as a provocation is now a powerful prototype for sustainable cities.

Located in the heart of the Venice La Biennale, Canal Café is more than just a café—it’s a living installation. Here, brackish canal water is purified using NSI’s advanced treatment system, producing high-quality drinking water for espresso. Visitors are invited to experience firsthand the possibilities of advanced water reuse, contributing to a sustainable future.

Visitors can enjoy this unique espresso at the Canal Café until November 23, making a direct impact on sustainable water use with every cup.

Canal Café is the result of a multidisciplinary, international collaboration:

    • Diller Scofidio + Renfro (DS+R) led the conceptual and architectural design, blending form and function into a space that embodies sustainability.
    • Natural Systems Utilities, part of NSI, provided expertise in decentralized water treatment, turning canal water into potable water with minimal environmental impact.

Zach Gallagher, CEO, adds: “This project allows the public to interact with water in a completely new and personal way. If we can take canal water in Venice and turn it into one of the finest espressos, what else can we do to protect and preserve the most essential resource for life?”

    • Sodai, NSI’s Italian engineering firm, ensured local implementation within Venice’s historic infrastructure.

Marzia Chiesa, Chief Strategy and Sustainability Officer, reflected: “Canal Café is more than an installation—it is a symbol of cultural transformation. It shows how we can close the loop and restore water to its true value. Strangely enough, the future of water might just be in that cup of coffee.”

    • Nijhuis Saur Industries, part of Saur group coordinated the project and delivered technical solutions that reflect decades of leadership in water management innovation.

“Canal Café is a testament to what is possible when we challenge conventional thinking about water reuse,” says Menno M. Holterman. “This project is a symbol of our commitment to rethink water solutions for resilient and vibrant cities and communities around the globe.”

    • Aaron Betsky, curator and critic, enriched the project’s cultural and conceptual depth.
    • Michelin-starred chef Davide Oldani crafted a special menu showcasing the unique properties of the purified canal water.
    • Webuild, a global leader in sustainable infrastructure, supported project execution and logistics.

Canal Café is not just a milestone—it’s a beginning. The project has sparked international dialogue on how cities can tackle water scarcity, climate resilience, and urban sustainability through bold, imaginative thinking. As the world’s water challenges grow more complex, NSI’s pioneering work demonstrates that innovation, collaboration, and vision can brew real solutions—one cup at a time.
