ANZOLA DELL’EMILIA (Bologna) – We start to discover the combination of ice cream and coffee with Carpigiani Gelato University, an interesting solution for both cafés and ice cream parlours. There will be no more secrets in making the perfect affogato or in obtaining a coffee-based sorbet extracted in cold brew that is well balanced in flavor:
all this is possible by following the online course “Gelato & Coffee: Recipes, Infusions, and Pairings“, taking place on May 12-13 on Carpigiani Gelato University’s digital platform, in collaboration with Accademia del Caffè Espresso.

A training proposal that aims to respond in an innovative way to the needs of professionals from the bar and gelato world who, for example, would like to tempt their customers with different proposals, such as Irish Coffee gelato.

The aim of the Carpigiani Gelato University course is to refine the art of combining two products that have always gone well together: coffee and ice cream.

The online training is structured in 8 hours over two days during which participants will be supervised by two expert lecturers in gelato and coffee making. On completion of the course, a certificate of attendance will be issued. In addition, it will be possible to access the recipe book so as to experiment with the combinations in one’s own point of sale.

Acquiring and updating one’s skills represents a new way forward for all those involved in the industry, which will take the gelato and café sector to a higher level through new business opportunities.

WASHINGTON, D.C. – The Institute for the Advancement of Food & Nutrition Sciences hosted a new webinar on March 4 to explore beverage consumption patterns and caffeine intakes in the US population. Caffeine is one of the most consumed food components because it is a stimulant. It can be found commonly in beverages, but it is also contained in cocoa or chocolate foods and medications.

The objectives focused on this session were mainly defining majour souces of caffeine in the diet and summarizing the human research on diet caffeine and identifyng the contribution of various beverage types to total caffeine intake and describe how these beverage patterns have evolved over time.

Marilyn Cornelius, PhD, Northwestern University, and Diane Mitchell, MS RD, Texas A&M University intervened.

The presentation was based on a recent paper IAFNS supported entitled “An update on beverage consumption patterns and caffeine intakes in a representative sample of the US Population”.

Marylin Cornelius: “The major contributor of caffeine in the American diet is coffee and tea. There are also other products with added caffeine such as coca-cola and energy drinks. These products are different from each other: generally coffee contains around twice as much caffeine as tea.

The best-detailed studies show that caffeine plays an important role in preventing diseases such as Parkinson’s, endometrial cancer, and skin cancer, not to mention mortality. It is important to note that caffeine has the best benefits against these diseases compared to just coffee or tea. However, when it comes to diseases such as type 2 diabetes and coronary heart disease, drinking coffee seems to have the best benefits in prevention”.

Cornelius adds: “Most data claimed that coffee is beneficial for health. In 2015 for the first time, the U.S Guidelines indicated that coffee might be part of a healthy diet. They suggested that 5 cups per day is safe. In 2020 it was suggested that very young individuals (from birth to 23 months) should avoid coffee completely. Also, pregnant women should avoid consuming less than 300 mg of caffeine in order not to affect the infant. Healthy adults could consume safely 400 mg of caffeine per day. When it comes to cola and energy drinks, the only danger discussed was in contact of sugar content only”.

The FDA also stated that caffeine can be part of a healthy diet for most people but to much caffeine can pose some danger to the health. The symptoms can be: increased heart rate, nausea, headache and high blood pressure. Generally, for most adults, 400 mg of caffeine is considered safe.

For the study, estimates of caffeine intake in the U.S. population were calculated thanks to a 2022 beverage survey, the Kantar Worldpanel Enhanced Beverage Service. A nationally representative sample of 49000 consumers (aged ≥2 years) completed a 1-day beverage intake survey which collected data on beverage type/category, amount, and brand.

Approximately 69% of the U.S. population consumed at least one caffeinated beverage per day. The mean (±SE) daily caffeine intake of caffeine consumers (age >2 years) from all beverages was 210 ± 1.5 mg. Caffeine intake was highest in consumers aged 50–64 years (246 ± 4.5 mg/day) and lowest in children aged 2–5 (42 ± 2.4 mg/day). At the 90th percentile intake was 520 mg/day for all ages combined. Coffee was the largest contributor (69%) to caffeine intake across all age groups followed by carbonated soft drinks (15.4%), tea (8.8%), and energy drinks (6.3%).

Diane Mitchell summarized the results of the study. There has been a decrease in the proportion of the population consuming caffeinated beverages but higher levels of intake. Furthermore, caffeine intake, particularly in younger children, are above the recommended intakes. Finally, for all age groups and all caffeinated beverages combined, intakes at the 90th percentile are above 400 mg/day which is not a dangerous level for health.

GENEVE – The global coffee industry generates nearly 40 million tons of biowaste each year – that’s about seven times the weight of the Great Pyramid of Giza. Instead of going to the landfill, coffee by-products can be upcycled into a wide range of products, from cosmetics to health foods, bricks and packaging.

Based on these findings – featured in a new report by the International Trade Centre (ITC), the International Coffee Organization (ICO) and the Center for Circular Economy in Coffee (C4CEC) – the Center has announced a global call for membership of coffee sector stakeholders to use circular economy approaches to open up new income and job opportunities.

The goal is to gather producers, small businesses, traders, roasters and consumer-facing companies, especially in coffee-producing countries, to tap economic opportunities while addressing critical environmental concerns. The platform is also open to research partners, civil society members, impact investors and international organizations.

The report, Making a Case for Circular Economy in the Coffee Sector: Insights from the Multi-Stakeholders Working Group on Circular Economy in Coffee, includes findings of a global survey of the ITC Coffee Guide Network’s Working Group on Circular Economy, involving the public and private sectors, academia and international organizations.

Lack of actionable knowledge, inadequate regulatory frameworks, and low levels of both investment and public-private collaboration are the top cited challenges to implementing circular economy at scale.

The Center for Circular Economy in Coffee aims to address gaps by providing technical knowledge and establishing a platform for collaboration with a scientific approach

The first precompetitive platform for enhancing circular economy in the coffee sector is supported by a global network of partners: Giuseppe e Pericle Lavazza Foundation, Politecnico di Torino, the University of Gastronomic Sciences in Pollenzo, the United Nations Industrial Development Organization (UNIDO), ICO and ITC.

To be included in the first membership round – to gain access to a global network and circular solutions – those interested can apply online by 31 May.

JAKARTA, Indonesia – So many specific types of coffee from plantations from various regions in Indonesia are registered and obtained Geographical Indication (GI) certificates, such as: Arabica Gayo, Arabica North Simalungun, Arabica Sumatra Mandailing, Arabica Java Preanger, Arabica Sindoro-Sumbing, Liberica Tunggal Jambi, Liberica Rangsang Meranti, Robusta Semendo, Robusta Empat Lawang, Robusta Lampung, and Robusta Temanggung.

Coffee with a geographical indication certificate has a huge export opportunity in the global market, thus becoming one of the sources of foreign exchange.

In the current condition, the development of coffee agribusiness at the downstream level, such as coffee cafes favored by the millennial generation, is a huge opportunity for coffee marketing in Indonesia. By looking at this need, an increase in marketing volume will be able to improve the welfare of the community, especially coffee producers and agribusiness actors.

However, it is important to note that the increasing global demand for coffee needs to be anticipated by Indonesia through a sustainable increase in coffee production.

In fact, over the past 10 years (2010-2020), the level of coffee productivity in Indonesia when compared to the availability of land, is still low. There was a decrease in harvested area from 1.27 million ha to 1.25 million ha, or an average decrease of 0.14 percent per year. As an export commodity, it turns out that during the last decade the volume of coffee exports has also decreased from 432,781 tons to 375,671 tons, or an average decrease of 1.41 percent per year. This means that farmers’ interest in maintaining coffee plants has declined.

Researchers from BRIN, Indonesia’s National Research and Innovation Agency, believe that this is due to the low incentives received by farmers, resulting in a lack of encouragement to increase production.

As stated by the Head of the Governance, Government, Economy, and Public Welfare Research Organization (OR TKPEKM), Agus Eko Nugroho, “The support of market players for farmers has not been established with mutually beneficial ties. Each party or market actor conducts market activities, without being based on a partnership relationship that shares roles to obtain proportional benefits,” he explained.

According to him, farmers as producers do not have a strong bargaining position. It is difficult for them to determine the price according to their wishes and they have to accept the price determined by the traders. Other factors include scattered and hard-to-reach production locations, limited market information, suboptimal product quality, and unavoidable cash needs at the farm level.

Thus, to sustain this business, coffee producers must also have the capacity and capability to produce and process their products to obtain added value and high prices in the market.

The government should seek technological breakthroughs and strategic policies in the development of coffee agribusiness in Indonesia. One of them is by establishing business partnerships that link market actors in coffee development, in order to ensure an increase in farmers’ income.

To ensure the availability of production technology, the government can create opportunities by adopting from high-productivity countries. Therefore, it is necessary to assess the current constraints and opportunities of agribusiness. It is then necessary to formulate alternative strategies for utilizing opportunities to increase production and penetrate the export market. This step will be able to increase the income and welfare of the coffee agribusiness community in Indonesia in a sustainable manner.

TURIN, Italy – The initiative for coffee&climate (c&c) invites to the YouTube Premiere “Growing Coffee in the Face of Climate Change – Addressing and Mitigating the Impacts” on February 8 at 3:30 pm CET. In his keynote speech, Michael Opitz presents how coffee farmers not only become more resilient in the face of climate change but succeed in actually increasing their yields.

Climate change on coffee

Climate change has a big impact on coffee farming and, by extension, on entire communities of coffee farm- ing families. This results in the loss of yields of coffee as well as food crops.

c&c supports farming families in not only becoming more resilient to the effects of climate change but also in increasing their yields. Michael Opitz is Managing Director at Hanns R. Neumann Stiftung, the foundation that implements the c&c projects. In his keynote speech, he explains how challenges can be turned into opportunities and how farming families can write their own success stories despite all the adversities posed by climate change.
